Aluminum will form a layer of protective oxide that prevents further reaction. Standard aluminum cookware isn't very good for cooking acidic foods, like tomato sauce or dishes with wine sauces because the acid in the food can break down that outer layer and degrade the aluminum in the cookware, as well as leaving your food tasting a little funky. 

Hard anodized aluminum has been specially treated to make this oxide layer much thicker, and is capable of standing up to most anything.
