Why animals such as cows and buffalo have developed appendix but not human?

The appendix is a vestigial organ found in the human. The human does not need it. It is believed to be the remnant of the caecum. The function of the appendix is to provide a house to the good bacteria that are known to digest the tough plant matter.

Humans are omnivores and they do not eat hard plant material. But the cows and buffalo eat hard plant material. Hence, they require appendix to digest the hard cellulose part of the plant.
