Why are assumptions in Physics so prevalent?

My teacher said that assumptions are quite frequently used in physics to make things simpler. As we have to solve questions, we can afford some level of approximations in our results. But when we become engineers / scientists we need more accurate results as we don’t have to just solve questions, we have to apply our knowledge to real world, without any silly assumptions like frictionless pulleys.
So overall we can see that till school level assumptions are prevalent to make things simpler.

In fact, they form much of the basis for how we interact with the world and each other everyday. Science operates on the assumptions that natural causes explain natural phenomena, that evidence from the natural world can inform us about those causes, and that these causes are consistent.
