why are chips packets flushed with chemically inert gases like Nitrogen?(plz give a detailed answer) ​

Chips packets are flushed with inert gases like nitrogen.

Because if chips come in contact with oxygen it reacts with oil compounds and rancidity occur. And chips become rancid and their odour and taste become change.
