I strongly believe that a dish getting global has much more to do with the way the dish is prepared than the core ingredients of the recipe. Some dishes are much more adaptable than others, and this is what makes them global. We do not eat the same version of pizza across the world. While a New York pizza will have pork or beef on it, an Indian Pizza would be full of hommade spices. And all you really have to do is throw different toppings on the same base : hardly an effort. On the other hand, take a signature curry dish which is characterized by its spices and flavor, and it would be too hard to replicate it to match the varied taste buds of people across the continents. Same holds for certain other dishes like Tacos, Burgers etc. which are too easily customized
