because Aluminium foil doesn't allow heat to go out of it and thus the food remains hot

this is because Al reacts with the O2 present in the air and forms a layer of aluminium oxide on it.Once this layer is formed Al further does not react with O2.because of this the food in the foil does not come in the contact with the air and this allows the food to remain fresh for a longer time.
