Because aluminium does not let the food to become rancid. Also aluminium, when comes in contact to heated food, Aluminium reacts with oxygen to form AlO2, aluminium oxide, which prevents the food from rancidity and prevents the entering of harmful substances inside the food and the H2O which is produced keeps the food moist and fresh.
