when seeds absorb water and germinate the food of endosperm is broken down due to activity of hydrolytic enzymes.This increase amount and quality of vitamins ,fatty acids  and proteins which are highly nutritious.

The germinated grams are considered as highly nutritive because there exist more carbohydrate and protein.

EXPLANATION:

They are found highly in sprouting seeds. Once the dormant seeds are hydrated with water the water imbibition process starts which is to activate the metabolic activity.

Thus, the stored elements in endosperm is transformed in to proteins, fatty acids, vitamins and other nutrients. Thus the germinated grams contains high carbohydrate and  high protein content.
