why are grapes sour in december and january

The answer is the cold climate of the two months December and January.


When grapes start ripening, they begin to lose their acidity. This makes the juice of the fruit turn sweet from their otherwise sour texture. In cold temperatures, the ripening process is delayed. In some cases, the grapes will not ripen fully. Because of this, they retain their acidity that increases as the climate gets colder. This, in turn, increases the sourness in the grapes.

The simplest answer of this question is "Due to the cold season during december and januray"
Actually the grapes becomes sweeter as they mature and with this they also lose their acidity. But in the colder temperature the process of ripening in them is stopped as the temperature is not suitable for plant's proper growth  and development. This result in retaining in sour taste in them. 

On the other hand the sourness could also be the result of abnormal plant growth like if their is too much fruit or grapes on a grape vine plant , the lack of sugar occur as there is there is not enough sugar produced by the plant from the photosynthesis process which result in lack of sugar ultimately producing the sour grapes.
