The lipids are known as esters of fatty acids because it emulsify the fats in the small intestine. Lipid is an enzyme present in the pancreatic juice secreted by the pancreas. Lipids only work in an alkaline medium, so the fats are first broke down in smaller globules by the bile juice secreted by the liver which is alkaline in nature.
