If you're speaking purely for argument then they matter. Because the truth is the most important factor in life. If youre just speaking to someoneand trying to understand where they're coming from or whatever, they don't matter as much.

Fallacies are a guide to point out when someone is being manipulative and trying to win and boost their ego (consciously or subconsciously) so they'll say anything that seems to make sense in order to prove to themselves they have an idea of what they're saying without checking if it's valid and sound.

Make sure you know what you're doing with another person. Whether it's an argument or just simply conversing. Know the difference when you should apply fallacies in the conversation.
