why are packets of chips sealed with nitrogen and not air

As chips contain fats and oils they are oxidised,they become rancid and their smell and taste change.Usually substances which prevent oxidation,antioxidants like nitrogen gases are added to foods containing fats and oils.which in result slows down the oxidation.
