pickles are preserved by adding salt and oil in order to protect the food from undergoing rancidity or oxidation if the pickles undergo racidity it will result in bad small and the food will start to small badly and the taste will change. the rancid food will not be fit for consumption so in order to keep the food fresh we add additives like salt etc
