Why are pickles, jams, jellies preserved in glass, porcelain and plastic containers?

Pickles, jams and jellies are especially preserved in the glass, porcelain and plastic containers as they contain Acids.

These are preserved in the metal containers and they react with metal to form the metallic acids.

The food items are derivative of the fruits or vegetables that are mainly tested with the process to make convenience.

Pickles, Fruit Jams and Jellies are preserved in glass, porcelain and plastic containers. The reason is that,

Pickles contain vinegar which comprises of acetic acid. Jams contain fruits which in turn contain Tartaric acid mainly. Jellies are also fruit flavours with acidity regulators. Hence they also have acid traces in their composition.

Due to this acidic nature they are kept in glass, porcelain and plastic containers as they dont react with these materials.

If they were placed in Metal containers the following reaction will occur,

Acid + Metal => Metal Salt + Hydrogen ( gas )

Since the salt is formed, they may make the mixture in container toxic along with release of bad odour. Hence they are not kept in metallic containers but they are kept in vessels made up of inert materials.
