Pickles are made using vegetables and specific fruits. It is easy for vegetables and fruits to get spoiled if they aren't consumed quickly. So, to keep the vegetables from spoiling, (because we want to have the same pickle for quite some time), we pickle it. Salt and oil keep the pickle from spoiling, and dehydrate the veggies.
