because of growth hormones
auxin and gibberling these are the harmones and these are responsible

Not all the plant cells are in rectangular shape.
But, they are all in similar size.
Some have rectangular shape because of there walls which are rigid.
And thus, these walls forces to the cells to have this rectangular shape.
