steel vessels are mostly used when compared to aluminium for cooking because :
1 steel vessels last for decades and are strong, they are cheap ,, they are heavy and food cooked in iron vessels enhances the iron content of the food substantially,
2 aluminium is not a good cooking alloy because it is a soft and highly reactive metal contact with strong acids, alkalies and salt from food causes the metal to dissolve and form pits, it changes the taste of the food and aluminium utensils were introduced by the Britishers for the prisoners living in the jails of India. They used aluminium because it is a slow poison and helps to decrease the life expectancy by a great amount.
