1 - less intense light - the best a plant can hope for is a full moon on a clear night, so to be seen they need to reflect the maximim amount of light as they can, and white does that better than any other color; in low light, reds and oranges don't look all that colorful (they appear brownish), pale blues and whites will stand out better 2 - night-blooming plants usually rely on scent to attract pollinators - scent travels farther that all but the brightest reflected light These two attractants (white color and scent) are the result of thousands of years of coevolution. If a plant that bllomed at night couldn't attract a pollinator, then it wouldn't have produced seeds and would have eventually died out. At the same time, insects, bats, or other night animals had to recognize that the plants might provide a food source, and had vision developed to see the flowers that reflected the light, or they wouldn't have visited the plants in the first place.
