why are the underground parts of plants like radish,carrot,beet and sweet potato thick,fleshy and swollen?which part of the plant are they?

In plants the major function of root is anchorage and absoption of water and nutrients. But in some plants beside these functions roots also perform the function of storing food. So in carrot, raddish , sweet potato the roots become thick and fleshy to store food.
