why are trihalides of nitrogen not oxidized to pentahalides?

this is because the pentahylides requires S P 3D hybridisation of the central atom . this is obtained by the exitement of electrons of central atom to empty D orbital. since nitrogen has no D orbital , therefore it does not undergo S P 3D hybradisation and hence no pentahylides are formed.
