Because our cells do not divide endlessly. With age, our cell growth and differentiation weakens. As we are young, our cell growth is fast and efficient, but with approaching senescence, we slowly start to lose this vigour of cellular activity.

Like single celled organisms, who divide forever, they can be called immortal, but humans have special and complex body organisation containing organs and organ systems! We don't have just one cell!

If our cells divide uncontrollably, it causes cancer! So our cells have a property called 'contact inhibition' which helps keep them from dividing endlessly and attaining immortality.
