Baking soda does not taste sour it means, that it has no acids in it. It is bitter in taste. If you rubits solution between fingers, it feels soapy. ... The indicators change their colour when added to a solution containing an acidic or a basic substance....

Well then baking soda is a basic substance and thus, it is bitter in taste and also, it feels soapy to touch which is just another property of bases. When tested with a red litmus baking soda solution turns the red litmus to blue indicating that it is a base.
