But in boiled egg both of above components are in nonfluid or say soft solid form , so the yellow portion of egg is fixed at any part inside egg and that's why the center of mass is at any defined point this is why boiled egg is more stable than normal egg.

This happens because when the normal egg is boiled in water , the water that we put will be absorbed by egg , then it becomes soft and stable
