Why both strands of DNA are not copied during replication?

If both strands act as Templates, two different proteins will be formed from a single (one) gene. It will complicate the Protein synthesizing machinery.
If two mRNA produced could be Complementary, they pairs and forms a double stranded mRNA from this Translation does not occur.
