Why can atmospheric pressure crush a can , but not crush a pan covered by a lid when we heat water?

it is such because ... when we heat water.... water vapour forms by the process of boiling and evaporation. Thus, the internal pressure is a littlr bit more or just equivalrnt to the exteenal pressure

the air inside the can is heavier in weight and the molecules are closely packed when there arises a temperature difference the the atmospheric pressure crushes the can
whereas in the pan the heated air is expanding inside the air and maintaining it's shape the atmospheric pressure cannot act on as the hot air is already increasing the pressure from inside
