Contrary to popular beleif, it is not stored in their "humps"; actually that is where the long term energy is held.
Water is absorbed by specialist tissue in the layers of skin below the camel hair; unlike many animals this layer is both very deep and able to absorb considerably more water than the tissue of the average mammal. Also their surface area to voloume is smaller and the hair, far from keeping the animal warm, it is there to stop water evaporating.
The camel's "cooling system" is different to many animals since it does not sweat, i.e. have pores in the skin which expel water to the surface and it evaporates to cool.
The cooling system is based on surface area to voloume, and the number of veins and arteries close to the skin. These blood vessels are far thinner than most mammals and rise to the surface, increasing the cooling surface. Rather like a radiator. Small mammals, such as rats and the likes of gerbils rely on the same cooling systems, and that is why they too can survive long periods without water.
