why can't humans digest cellulose?

Because humans don't have bacteria to produce enzyme cellulase which inturn helps to break 1-4 beta glucose bonds in cellulose. So humans can't digest cellulose.

Humans are unable to digest cellulose because the appropriate enzymes to breakdown the particles of Cellulose are not present in the human body... The Ruminants have these enzymes and special organs which help them to digest cellulose...
