why can't we digest cellouse

This is because we don't have the presence of cellulose digesting bacteria in our body. Ruminants, on the other hand, have the presence of the cellulose digesting bacteria present in their stomach, and after the cellulose os digested, they bring the grass back to their mouth and then chew it. (known as "chewing the cud"). That's why animals like cow can digest cellulose, whereas humans cannot.

Humans are unable to digest cellulose because the appropriate enzymes to breakdown the beta acetal linkages are lacking.
Humans don't have the necessary bacteria in our intestines.So, we can't digest cellulose.
