We can't digest cellulose like cattle , 'cause a special type of enzyme (cellulase) is present in ruminate animals which can easily digest the cellulose.

This enzyme is absent in human beings.

In cow there is a enzym which is known as cellulose and It is that type of enzym..which we can't eat only cattles can eat it and it can be easily digested in their body while we don't have that enzym and we can't digest it!
