why can't we make h2O at laboratories by the process of electrolysis?

in a familiar high- school chemistry demonstration , an instruture first uses electricity to split liquid water into its continued gases , hydrogen and oxygen . Then , by combining the two gases and ignition them with a spark , the structor changes gases back into water with a loud pop.
