why can't we run a bike with water?!​

Water is not a fuel. Water is the ash left over after hydrogen and oxygen have burned together.

You can no more use water as a fuel than you can use fully-burnt ash to feed your fireplace.

Water can be electrolysed into hydrogen and oxygen. The process isn’t complicated but it also isn't very efficient. You would be more that twice as well off (in terms of input vs output energy) using the same electricity to charge a battery.

PS. The link goes nowhere. I guess some one else noticed the problems with the idea
