Water cannot be used in thermometers, it is because water is transparent so we cannot take the readings properly.
Another reason is that is it too wet that it sticks to the walls of thermometer.
So we prefer mercury in thermometers.
It is easy to take reading and also it doesn't stick to the walls of the thermometer.
Also, water have high boiling point than mercury.

the water cannot be used in thermometer because the water can not change the colour accoding to the temperature measured in the thermometer ,the water cannot measure the temperature in negative or positive ,the water show the property of condensation and cannot give the exact measure and the water does not have the temperature reading capacity..
