Carbon forms long chains because it is highly reactive, and in different arrangements like

Bcoz each carbon is identical, they all have four valence electrons, so that they can easily bond with other carbon atoms to form long chains or rings. Infact a long carbon atom can bond with another carbon atom two or three times to make double and triple covalent bond between two carbon atoms.
