why carbon is not used to reduce oxides of sodium and Aluminium

Because highly reactive metals like sodium have more affinity for oxygen than carbon

The positions of Sodium and Aluminium are much higher in the electrochemical series. Thus these oxides cannot be reduced by carbon reduction process. They have strong affinity for oxygen and form very stable oxides.
