Why chapati divides into ywo layer on flame

There could be two reasons for this:
1) In the process of making chapati, the circular dough is oiled with cooking fat and the rolled before finally being rolled into a flat dough. The oil in between the surfaces of the dough ensure that it does not stick together at these layers. This forms the various layers in the chapati.
2) Another explanation put forward is that the chapati dough contains water and bubbles. When the chapati is put on heat, water is converted to steam and as it tries to escape out of the water tight dough,since it occupies more volume, it separates the chapati into layers.

There are small gaps in the chapati filled with small air caps.  The chapati also has some moisture.

When heated from the bottom, the heat vaporizes moisture.  The water vapor  and the air particles inside chapati expand a lot due to increase in temperature.  As one presses the chapati from top, the chapati bulges even more.  That is due to increased contact area and more heat.
