Because the ratio molar mass of elements in a compound are different
For example
In electrolysis of water the amount of gas on cathode is double of that of anode since at anode oxygen gas is present while on cathode hydrogen gas is present and in water there are 2 molecules of hydrogen and one molecule of oxygen..
Hope it helps!☺
