When Copper sulfate is heated strongly, it changes into white colored anhydrous copper sulphate and when water is added again to it then it is again changed to blue color copper sulphate.
Due to heating, the water of crystallization evaporates from the blue crystals of copper sulphate , and they develop white color.
Their color changes because they lose the water of crystallization.
