Cooking pans don't have metal handles as metals are good conductors of heat. Instead they have handles made of plastics like Bakelite which are not good conductors of heat

Because the surface where we cook food becomes hot when we cook . and if the handles would be of metal the hotness would be transfered to the handles and would burn our hand.so the heat doesn't tranfer to plastic handles and cannot burn our hand.
