Why cooking results in loss of certain nutrients why is it important to include some fruits and raw vegetables in our diet?

Raw foods may be richer in certain nutrients than cooked foods. Some nutrients are easily deactivated or can leach out of food during the cookingprocess. Water-soluble vitamins, such as vitamin C and the B vitamins, are particularly susceptible to being lost during cooking

Hey mate here's your answer....

Some nutrition and vitamins gets depleted through heating like vitamin C. That's why raw foods are richer than cooked food in nutrient value.
