why cooking vessels are made of metals but the handels are made either wood or plastic ?

Because metal are high conductors of heat as well as electricity and plastic and wood are insulators when ever you touch your handle it will not be hot or not as much as the metal vessel.

Hence for our safety handles of cooking vessels are made of wood or plastic of any other insulator.
