Metals are good conductors of heat and thus cooking vessels are made up of metals so that the food inside them would get cooked up by the conduction of heat from the gas stove (fire flame) to the interior of the vessel.

On the other hand, the handles are made up of bad conductors such as rubber in order to help us hold its handle without getting our hands burned due to the heat of the vessel.
