Why copper bottomed vessels are used for cooking

First, Copper is used in cooking vessels because it is an excellent conductor of heat. Located at the bottom of the vessel, it quickly absorbs the heat from the flame below helping the food cook faster. 

Now, it must be remembered that despite its role as an excellent heat conductor, copper cannot be used in entirety in the form of a copper vessel because it can chemically react with the food inside.

Hence, copper-bottomed vessels are used in which the copper only forms the outer bottom of the vessel, never coming in contact with the food inside.

Copper bottomed vessels are used for cooking because of copper's excellent heat conductivity. It is durable and corrosion-resistant. Copper conducts five times better heat than iron and twenty times better than stainless steel. Heat spreads evenly in copper cookware than in traditional pots. As copper effectively stores heat, the food stays warm for a longer period of time than other traditional pots.
