Curd turn more sore in summer than winter because growth of bacteria in the curd is faster in summer than winter.

in summers the temperature is optimum for the multiplication of the lactobacillus ( the bacteria that converts milk into curd) than in winters so the curd becomes more sore in summers than winters.
