Because it is dead. Dead thing are not alive and only the things that are alive can perform such activities such as breathing eating etc.

Since every function performed to live life stops ,our heart beating and lungs also stops working.

Now , our lungs can't take Oxygen in and Carbon dioxide out .

More over since heart stops breathing ,flow of blood stops and if the flow stop blood will not reach the lungs for oxidation .

So ,no oxidation means no oxygen and no oxygen means no breathing
