Einstein has used cathode rays for his gold foil experiment just because they travel in straight line in the absence of magnetic or electric field

Cathode rays travel from the cathode to the anode. While travelling they collide with the atoms of the gas which is in the chamber with low pressure, causing them to emit electrons and form positive rays which will get attracted to the cathode because it is negatively charged

Thats why Einstein use this for making gold
