I think that Evelyn meant that it was really difficult for her to make out what the people with bushy beards want to say as she could not see their lips properly.It became really difficult for her to read their expressions and thereby interpret what they meant to say!Moreover,she also had to read their eyes and not only the lips.

I think that she suffers from hearing disability. She communicates with people by watching their lips movements and other facial expression. However the beards of the men hides his lips and facial expression. She had trouble in communicating with bearded man.
