luke warm milk convert into curd because whenever the milk is too hit or too cool the lactobacillus bacterium wont be active and cant convert the hot or cool milk into curd ...... so we have to heat the milk and cool it upto room temperature and then we have to add sample of curd ..........

if Luke warm milk will have a bacteria called lactobacillus converts,it lactose into lactic acid . this is the reason why Luke warm milk convert into curd .

it won't be active on too high or too low temperature.
