Tony gets the energy of the gauntlet and the snap he does emits lot of gamma radiation. He can't withstand the enormous energy emitted. Hulk, on the other hand was specially made for this, So he did it earlier but that also proved fatal for his hand.

Why The Snap Killed Tony Stark: With great power comes great responsibility, and the energy used to bring that wish to fruition ended up killing Tony; he is only a human and couldn't withstand the power it took from him.
