The speaker is addressing a 'you' who is a woman, given the words he uses - "soft look", "glad grace" and the fact that she was loved by many men. The "one man" could well be the speaker himself (knowing that this is by Yeats makes this even more likely, given his obsession with Maud Gonne and the recurring theme in many of his other poems).
The speaker imagines her as an old woman looking into the fire and thinking of what happened to Love. Since, presumably the woman he is addressing is not old ("when you are old") the poem could be read as a seduction poem - in other words, don't deny love now or you will regret it when you are old
