The force applied by the tool is divided by the area of the tool that actually contacts the workpiece material - the edge. So the sharper the edge, the less area, and so the greater force per unit area.
Having a sharp edge rather than a radius edge assures cutting rather than rubbing. Rubbing can help create work hardening in many materials, which makes further cutting quite difficult.
If the edge is too sharp, however, it may not have sufficient strength to separate the chip from the workpiece, so this explains the variety of angles on tools for machining various materials.
Finally, there are front and side clearance angles that are ground into a tool in addition to the cutting edge in order to assure sufficient clearance, avoid friction (rubbing) which can cause work hardening , and to allow for workpiece and tool to expand as temperature increases in operation.
